What is a Pit Master?
The Yoda of barbecue is the chef or "pitmaster." He is the one vested with skill
and Zen-like knowledge of how and when to adjust the intake and outlet dampers,
temperature and cooking time to bring about perfect barbecue. This shaman of the
barbecue considers everything from weather conditions to the type of food and
the type of sauce, rub or seasoning to be used. The pitmaster also considers
temperature, cooking time and the final degree of doneness. It's not the pit
that makes good barbecue, it's the pitmaster.
Where there's a good smoker, there's good barbecue!
10 Bones is based in Olive Branch, MS 15 minutes from Downtown Memphis where Elvis & BBQ are King! We specialize in old school, "Memphis Style" BBQ! This means we cook low and slow using premium charcoal for heat and fruit woods for smoke!
As head Rib Cook for the Natural Born Grillers for 8 years and now Pit Master for 10 Bones BBQ, I have been a part of over 51 Grand Championships and over 200 1st Place Trophies.
My baby back ribs recipe has won 9 Grand Championships and over 25 1st Place Trophies!
10 Bones has one of the most unique grills around! It's custom made by Backwoods Smokers. We have 2 Competitors on the front and "The Whole Hog" on the back! I can make these smokers "talk" and if you get the opportunity to judge us, you'll know what I mean!
